Anthocyanins are a group of natural chromophores widely distributed in the plant kingdom and comprise the largest group of water-soluble color pigments detectable by the human eye.

Anthocyanins come from a wide range of sources. They are synthesized by fruits, vegetables, flowers and some cereals, and give rise to the red, purple and blue colors found in these plants. These colors are vitally important in a variety of natural processes, providing the attraction that leads to pollination of many species as well as protection against many potential environmental threats, including ultraviolet radiation, temperature changes, and parasitic attack.

Given their lively hues, anthocyanins have been used for centuries to deliver vibrant red, pink, magenta and purple colors in a wide range of food applications. In addition, global attention to anthocyanins has increased after a series of studies recently pointed to a number of health benefits anthocyanins can deliver due to their antioxidant capabilities.

Beta Carotenes

Natural beta-carotene belongs to a family of carotenoids, which are responsible for the yellow and orange colors present in a large variety of plants. Our natural Beta-carotene is composed of carotenoid pigments derived from oil palm fruit, carrots, other vegetables or microorganisms (algae and fungi). Natural Beta-carotene imparts vivid orange and yellow hues in a wide range of food applications.


Betanins, or betalain pigments, come from beet root (Beta Vulgaris).  The root grows naturally and it is also cultivated in temperate regions and has many food uses, from being eaten raw or cooked to being used to produce sugar and colorants. As colorants, they are water soluble and provide a bright red-purple color.

Our Betanin colors are part of specially and carefully prepared formulations that were developed in order to offer a wide spectrum of pink, magenta and red-purple hues for a variety of applications and a wide pH range, showing superior light stability.


Annatto is the seed of the tropical bush Bixa Orellana, also known as the lipstick tree, a plant native to Central and South America. Although annatto can be used as a spice in traditional cooking for its flavor, the carotenoids found in the coating of its seeds can deliver a bright yellow to orange color suitable for a variety of food and cosmetic applications.

Annatto is not stable at low pH, however, we have a product that can be used in mild acidic conditions such as fermented dairy products. Our annatto colors have excellent light and thermal stability.

Chlorophyll and Chlorophyllin

Chlorophyll is an oil-soluble green pigment found in plants, algae, and cyanobacteria.  For food color, it is extracted principally from alfalfa.

Chlorophylls and chlorophyllins are used to impart green shades to a wide range of food applications. Our chlorophyllin colors have been specially formulated to be heat, light and pH stable for a variety of applications.


Paprika, an extract from peppers (Capsicum annum), contains several carotenoids, including capsanthin, capsorubin and beta-carotene. The entire extract containing all the flavor and color components present in the original fruit is called paprika oleoresin.


Turmeric is a powder obtained by grinding Curcuma longa’s root.  It is a yellow colored spice cultivated in countries such as India, China, Pakistan and Peru and is one of the main ingredients of curry powder.

The colors it provides are greenish-yellow to bright yellow and are stable at a variety of pH levels and for a wide range of food applications.


Cochineal colors are naturally sourced substances that have been used for centuries to deliver vibrant red, magenta and orange hues in a wide range of food applications.

These susbstances are obtained from carminic acid, a chromophore produced by Dactylopius coccus, commonly known as cochineal. This insect grows on certain varieties of cactus that are found in the semi-arid regions of Peru, Bolivia and Chile.

Our colors of the cochineal line are specially and carefully prepared formulations that were developed in order to offer a wide spectrum of red, magenta and orange hues for a variety of applications and a wide pH range, showing superior thermal and light stability.  They can be water soluble, water dispersible, oil soluble or oil dispersible and can be used in powder or liquid form.

Safflower – Carthamus

Safflower extract is a yellow water-soluble pigment extracted from the flowers of the Carthamus tinctorius plant which contains three pigments: red carthamin, safflower yellow A and safflower yellow B. Safflower is native to arid environments that have seasonal rain.

Safflower extract is recognized as a food ingredient and a spice in several countries and is also used as a substitute to saffron. The yellow pigments deliver excellent stability towards heat, light and pH.


Lycopene is a bright red carotenoid responsible for the color in tomatoes, and other fruits and vegetables, such as red carrots, watermelons, guava and papayas.

As a colorant, lycopene is used to impart a range from orange to red hues in a wide variety of food applications.


Gardenia is a plant of the Rubiaceae family native to China. Gardenia fruits and other parts of the plant have been a part of the folklore of East Asian cultures for centuries. The flowers are often used as ornamental plants and for decorative purposes. They have also varied uses in the market due to their intense perfume.

The pulp of the gardenia fruit contains three major groups of water soluble pigments: crocins, iridoids and flavonoids and in the color industry they are used to impart yellow and blue shades. Gardenia pigments are used and approved as an edible food colorant in several countries in East Asia.


Lutein is a carotenoid found in several flowers and leafy vegetables. It can be obtained as a by-product of chlorophyll extraction, or from marigold. Marigold is a flower that grows in Mediterranean regions. Its petals have culinary and medicinal applications in many cultures. Marigold extracts are also used to impart natural yellow color in food applications.


The genus Monascus includes several fungal species that will grow on various solid substrates, specially steamed rice.  Monascus, also known by the names ang-khak rice mold, corn silage mold, maize silage mold and rice kernel discoloration, is also used as a color tool that delivers red hues in a wide range of food applications.
